Ingredients

  • 2 boneless ribeye steaks, about 1 inch thick
  • 1 tbsp avocado oil
  • 1 tsp kosher salt
  • 3/4 tsp coarsely ground black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp softened unsalted butter
  • 1 small garlic clove, finely grated
  • 1 tsp chopped parsley
  • 1/2 tsp chopped thyme

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Remove the steaks from refrigeration for 20 minutes, pat them very dry, and trim only unusually thick exterior pieces of hard fat.
  2. Step 2.Stir softened butter with grated garlic, parsley, and thyme, then chill the mixture briefly while preparing and cooking the steaks.
  3. Step 3.Preheat the air fryer to 400°F, rub both sides of each steak with avocado oil, and season evenly with salt, pepper, and garlic powder.
  4. Step 4.Set the steaks in the hot basket with clear space between them, making sure no edge folds upward against the side of the basket.
  5. Step 5.Cook for 5 minutes, turn with tongs, and continue for 4 to 7 minutes while checking the center with an instant-read thermometer.
  6. Step 6.Remove at about 130–135°F for medium-rare or 140–145°F for medium, recognizing that temperature rises slightly during resting.
  7. Step 7.Place a spoonful of garlic-herb butter on each steak, loosely tent, and rest for 5 minutes so the juices redistribute before cutting.
  8. Step 8.Slice across the grain only when ready to serve, spoon the melted butter over the slices, and add a final pinch of salt if needed.
