- 1 tsp fresh thyme leaves
- 1 tsp Dijon mustard
- 1 lb puff pastry
- 1 large egg, beaten

- Step 1.Pat the chicken pieces dry, season them with measured salt and pepper, then brown them in hot olive oil in batches without cooking them completely through.
- Step 2.Move the chicken to a clean plate, melt the butter in the same pan, and cook the carefully washed leeks until soft without allowing them to brown heavily.
- Step 3.Stir in the garlic for thirty seconds, sprinkle the flour evenly over the leeks, and cook for one minute so the finished sauce has no raw flour taste.
