  • 3 cups cooked shredded chicken
  • 8 large flour tortillas
  • 2 cups red enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 oz diced green chiles
  • 1/2 cup sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 2 tbsp chopped cilantro
  • Salt to taste

Instructions

  1. Step 1.Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. Step 2.Combine shredded chicken, green chiles, sour cream, garlic powder, cumin, and a pinch of salt in a bowl.
  3. Step 3.Warm the tortillas briefly in a skillet or microwave so they become flexible enough to roll without cracking.
  4. Step 4.Spread about 1/2 cup enchilada sauce across the bottom of the baking dish.
  5. Step 5.Place a portion of chicken filling down the center of each tortilla and add a small handful of mixed cheese.
  6. Step 6.Roll each tortilla snugly and place it seam-side down in the dish, arranging the enchiladas close together.
  7. Step 7.Pour the remaining enchilada sauce evenly over the top, making sure the tortilla edges are coated.
