Ingredients

  • 1 1/2 lb boneless skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 lime, juiced
  • 8 small flour tortillas
  • Salt and black pepper

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Slice the chicken into thin strips against the grain. Slice the peppers and onion into similar-sized strips so they cook evenly.
  2. Step 2.Combine chili powder, paprika, cumin, garlic powder, 1/2 teaspoon salt, and black pepper in a small bowl.
  3. Step 3.Toss the chicken with half of the spice mixture and 1 tablespoon olive oil. Let it stand for 10 minutes while the skillet heats.
  4. Step 4.Heat a large cast-iron or heavy skillet over medium-high heat until very hot.
  5. Step 5.Add the chicken in a single layer and cook for 4–6 minutes, turning occasionally, until browned and cooked through. Transfer to a plate.
  6. Step 6.Add the remaining oil, then the peppers and onion. Cook for 4–5 minutes until lightly charred but still slightly crisp.
  7. Step 7.Sprinkle the remaining spice mixture over the vegetables and toss well.
  8. Step 8.Return the chicken to the skillet and toss everything together for 1–2 minutes until hot.
  9. Step 9.Squeeze fresh lime juice over the fajita mixture and taste for seasoning.
  10. Step 10.Warm the tortillas and serve immediately with the sizzling chicken and vegetables plus salsa, sour cream, avocado, or cheese.
