- 1 1/2 lb boneless chicken thighs
- 8 cups low-sodium chicken broth
- 2 cups water
- 1 medium onion, diced
- 3 carrots, sliced

- 2 tbsp chopped fresh dill

- Step 1.Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery and cook for 5–6 minutes until the vegetables begin to soften.
- Step 2.Add garlic and thyme and cook for about 30 seconds until fragrant.
- Step 3.Pour in the chicken broth and water, then add the bay leaf. Bring the liquid to a gentle simmer.
- Step 4.Add the chicken thighs and keep the soup at a gentle simmer rather than a hard boil so the meat stays tender.
- Step 5.Cook for about 20 minutes, or until the chicken is fully cooked and reaches 165°F in the thickest portion.
- Step 6.Transfer the chicken to a plate and let it cool enough to handle. Keep the broth simmering gently.
