  • 3 cups cooked diced or shredded chicken
  • 3 cups marinara sauce
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup grated Parmesan, divided

  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 2 tbsp chopped basil or parsley

Instructions

  1. Step 1.Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish. Bring a large pot of salted water to a boil while you measure the sauce, cheeses, chicken, and breadcrumb topping.
  2. Step 2.Cook the penne until it is about 2 minutes shy of al dente according to the package directions. Drain well without rinsing so the pasta keeps enough surface starch for the marinara to cling to it.
  3. Step 3.In a large bowl, combine the drained pasta, cooked chicken, marinara, Italian seasoning, garlic powder, 1 cup mozzarella, and 1/4 cup Parmesan. Fold gently until the pasta and chicken are evenly coated.
  4. Step 4.Transfer the mixture to the prepared baking dish and spread it into an even layer. Avoid pressing it down firmly, because a loosely packed casserole heats more evenly and is easier to serve.
