- 1 1/2 lb boneless skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup Italian-seasoned breadcrumbs
- 1/2 cup grated Parmesan
- 2 cups marinara sauce
- 1 cup shredded mozzarella
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- Fresh basil for serving
Instructions
Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.
- Step 1.Preheat the oven to 425°F and lightly oil a large baking dish or rimmed sheet pan.
- Step 2.Slice each chicken breast horizontally into thinner cutlets and gently pound any thick sections to an even thickness.
- Step 3.Season the chicken with salt and black pepper. Set out three shallow dishes for flour, beaten eggs, and breadcrumbs mixed with Parmesan.
- Step 4.Coat each cutlet in flour, shaking off excess, then dip into egg and finally press into the Parmesan breadcrumb mixture.
- Step 5.Heat olive oil in a large skillet over medium heat. Cook the breaded chicken for about 2–3 minutes per side until golden; work in batches if needed.
- Step 6.Spread a thin layer of marinara in the baking dish and arrange the browned chicken over it.
- Step 7.Spoon more marinara over each cutlet without completely covering the crispy coating.
- Step 8.Sprinkle mozzarella evenly over the chicken and bake for about 12–15 minutes, until the cheese melts and the chicken reaches 165°F.
- Step 9.For extra browning, switch to broil for 1–2 minutes while watching closely so the cheese does not burn.
- Step 10.Rest for 5 minutes, then garnish with basil and serve with pasta, salad, or roasted vegetables.
