Ingredients

  • 2–3 chicken breasts
  • 500 ml chicken stock
  • A large knob of butter (or oil) for frying
  • 1 small onion, finely diced
  • 1–2 bay leaves
  • 1 tbsp mild curry powder
  • 1 tsp turmeric
  • 1/2 tsp brown sugar
  • 1 tbsp tomato purée
  • 60 ml red wine
  • 60 ml water
  • 200 g mayonnaise
  • 125 g crème fraîche
  • 1/2 tbsp lemon juice
  • 2 tbsp dried apricots, chopped
  • 2 tbsp sultanas
  • Salt and pepper, to taste

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Poach the chicken breasts in the chicken stock with the diced onion and bay leaves until cooked through, then cool the chicken and reserve the stock for another use.
  2. Step 2.Fry the onion in the butter or oil until softened, then stir in the curry powder, turmeric, brown sugar, and tomato purée.
  3. Step 3.Add the red wine and water, simmer the curry base briefly, then let it cool completely.
  4. Step 4.Mix the cooled curry base with the mayonnaise, crème fraîche, and lemon juice.
  5. Step 5.Fold in the cooled chicken, chopped dried apricots, and sultanas.
  6. Step 6.Season with salt and pepper to taste, then chill before serving.
