  • 1 large egg
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard

  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 yellow onion, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups low-sodium beef broth

Instructions

  1. Step 1.Combine the ground beef, panko, egg, ketchup, Worcestershire, Dijon, salt, and pepper in a bowl, mixing gently with your hands only until the ingredients are evenly incorporated.
  2. Step 2.Divide the mixture into four equal portions and shape each into an oval patty about 3/4 inch thick, keeping the mixture loose enough that the cooked patties remain tender.
  3. Step 3.Heat the oil in a large skillet over medium-high heat, add the patties, and sear for about 3 minutes per side until deeply browned; transfer them to a clean plate.
  4. Step 4.Reduce the heat to medium, add the sliced mushrooms and onion to the same skillet, and cook for 6 to 8 minutes until softened and golden around the edges.
  5. Step 5.Add the butter, let it melt, then sprinkle in the flour and stir for about 1 minute so the flour coats the vegetables and loses its raw taste.
  6. Step 6.Gradually pour in the beef broth while stirring and scraping the browned fond from the bottom of the skillet, then bring the gravy to a gentle simmer until slightly thickened.
  7. Step 7.Return the browned patties and any collected juices to the skillet, spoon some gravy over the tops, and reduce the heat so the liquid maintains a gentle simmer rather than a hard boil.
  8. Step 8.Cover loosely and cook for 10 to 12 minutes, turning the patties once if necessary, until the centers reach 160°F and the gravy has a smooth, spoon-coating consistency.
  9. Step 9.Taste the gravy and adjust salt and pepper in small amounts; if it becomes too thick, stir in a splash of broth, or simmer uncovered briefly if it remains too thin.
  10. Step 10.Serve each Salisbury steak hot with plenty of mushroom-onion gravy, ideally alongside mashed potatoes, buttered noodles, green beans, or another simple vegetable.
