Ingredients

  • 120 g plain flour
  • 1 tsp salt
  • 300 ml whole milk
  • 3 large eggs
  • 60 ml beef drippings, lard, or vegetable oil

Instructions

  1. Step 1.Whisk the flour and salt in one bowl. Whisk the eggs and whole milk in another, then gradually combine into a smooth batter. Refrigerate while the oven heats.
  2. Step 2.Heat the oven to 220°C. Add about one teaspoon of drippings or oil to each cup of a 12-cup metal muffin tin and heat the tin for about 10 minutes.
  3. Step 3.Stir the cold batter, then swiftly pour roughly 60 ml into each hot cup. Return the tin to the oven immediately.
  4. Step 4.Bake for about 20 minutes without opening the oven until tall, crisp and golden. Serve at once.
