- 2 disks chilled pie dough
- 6 cups peeled sliced apples
- 3/4 cup granulated sugar
- 2 tbsp brown sugar
- 3 tbsp all-purpose flour
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp kosher salt
- 2 tbsp unsalted butter, diced
- 1 egg beaten with 1 tbsp water
- Coarse sugar, optional
Instructions
Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.
- Step 1.Heat the oven to 425°F and place a rimmed baking sheet on the lower rack so it becomes hot enough to catch drips and help the bottom crust brown.
- Step 2.Roll one dough disk into a circle large enough for a 9-inch pie plate, ease it into the plate without stretching, and refrigerate while preparing the filling.
- Step 3.Toss the sliced apples with both sugars, flour, lemon juice, cinnamon, nutmeg, and salt until every slice is lightly coated and glossy.
- Step 4.Pile the apples into the chilled crust, mounding them slightly in the center, and dot the surface with small pieces of butter for richness.
- Step 5.Roll the second dough disk, place it over the apples or cut it into lattice strips, then seal and crimp the edges firmly so juices stay inside.
- Step 6.Brush the top crust with egg wash, sprinkle with coarse sugar if using, and cut several vents if the top crust is solid.
- Step 7.Bake for 20 minutes at 425°F, then reduce to 375°F and bake 40 to 45 minutes until the crust is deep golden and the filling bubbles thickly.
- Step 8.Cool the pie on a rack for at least 3 hours before slicing so the apple juices set instead of running across the plate.
