Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 2 tbsp sour cream
  • 1 tbsp unsalted butter
  • 4 oz diced ham
  • 1 cup shredded Monterey Jack or mozzarella
  • 1 small tomato, diced
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper
  • 1 tbsp neutral oil

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Warm the tortillas briefly so they are flexible and less likely to crack when rolled.
  2. Step 2.Whisk eggs with sour cream, salt, and pepper until smooth and slightly aerated.
  3. Step 3.Melt butter in a nonstick skillet over medium-low heat and add the egg mixture.
  4. Step 4.Cook slowly, folding with a spatula until the eggs form soft moist curds, then remove them from the heat.
  5. Step 5.Lay the tortillas flat and divide the scrambled eggs across the lower third of each one.
  6. Step 6.Top evenly with ham, shredded cheese, and diced tomato while leaving a clear border around the filling.
  7. Step 7.Fold the sides inward, then roll each tortilla tightly from the bottom to form a sealed burrito.
  8. Step 8.Heat a thin layer of oil in a clean skillet over medium heat and place burritos seam-side down.
  9. Step 9.Cook and turn until each side is crisp and golden and the cheese inside has melted.
  10. Step 10.Rest for 2 minutes before slicing or wrapping for later serving.
