Ingredients

  • Pastry dough for 12 tart shells
  • 1/4 cup melted butter
  • 1 1/4 cups brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup corn syrup
  • 3 large eggs
  • 1 teaspoon white vinegar
  • 1 1/2 teaspoons vanilla extract

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Roll the pastry dough, cut twelve circles, and gently fit them into a muffin tin without stretching the pastry.
  2. Step 2.Whisk melted butter, brown sugar, maple syrup and corn syrup until the sugar is evenly moistened.
  3. Step 3.Beat in the eggs, vinegar and vanilla only until combined so the filling bakes evenly without becoming overly foamy.
  4. Step 4.Divide the filling among the cold pastry shells, leaving headroom because the custard rises during baking.
  5. Step 5.Bake at 425°F for five minutes to set the pastry, then reduce the oven to 350°F without removing the pan.
  6. Step 6.Continue baking for 15 to 20 minutes until the pastry is golden and the centres are set around the edges.
  7. Step 7.Cool the tarts in the tin until the filling has settled and can be lifted without breaking the pastry.
  8. Step 8.Serve at room temperature or slightly warm, allowing the maple filling to remain soft and glossy.
