Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup melted butter
  • butter and pure maple syrup, to serve

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Whisk the flour, sugar, baking powder and salt in a large bowl until the leavening is evenly distributed.
  2. Step 2.Whisk the eggs, milk and melted butter in a second bowl, then pour the mixture into the dry ingredients.
  3. Step 3.Stir only until no dry flour remains; small lumps keep the pancakes tender rather than tough.
  4. Step 4.Heat a lightly buttered skillet over medium heat and spoon in portions of batter with room to spread.
  5. Step 5.Cook until bubbles appear and the underside is golden, then flip once and finish the second side.
  6. Step 6.Keep finished pancakes warm briefly, stack them, and serve with butter and pure maple syrup.
