Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3/4 cup sour cream
  • 1/4 cup milk
  • 1 1/4 cups semisweet chocolate chips
  • 2 tbsp coarse sugar, optional

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Heat the oven to 400°F, line a standard 12-cup muffin pan, and lightly grease the pan surface around each liner for easy release.
  2. Step 2.Whisk flour, baking powder, baking soda, and salt in a large bowl until the leaveners are distributed with no visible small lumps.
  3. Step 3.Whisk cooled melted butter with sugar, eggs, and vanilla until glossy, then whisk in sour cream and milk until mostly smooth.
  4. Step 4.Pour the wet ingredients into the dry mixture and fold with a spatula only until a few dry streaks remain in the thick batter.
  5. Step 5.Reserve a small handful of chocolate chips, fold the rest through the batter with several broad turns, and stop as soon as combined.
  6. Step 6.Portion batter evenly into the liners until nearly full, then press the reserved chips on top and add coarse sugar if using.
  7. Step 7.Bake for 5 minutes at 400°F, reduce the oven to 350°F without opening the door, and continue 14 to 17 minutes until golden.
  8. Step 8.Test through plain crumb rather than melted chocolate, then cool 5 minutes in the pan before transferring muffins to a wire rack.
