Ingredients

  • 8 thick slices brioche or Texas toast
  • 4 large eggs
  • 1 cup whole milk
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • 1/4 tsp kosher salt
  • 2 tbsp unsalted butter
  • Maple syrup, for serving

Instructions

  1. Step 1.Arrange the bread in a single layer for several minutes to dry the surfaces slightly.
  2. Step 2.Whisk eggs and milk until no streaks of egg white remain.
  3. Step 3.Whisk in cinnamon, vanilla, brown sugar, and salt until the sugar begins to dissolve.
  4. Step 4.Preheat a wide skillet over medium-low heat and melt enough butter to lightly coat it.
  5. Step 5.Dip each bread slice into the cinnamon custard and turn to coat both sides evenly.
  6. Step 6.Allow excess custard to drip away so it does not pool around the bread in the skillet.
