Ingredients

  • 1 pound dried yellow peas
  • 1/2 pound salt pork or ham
  • 3 carrots, diced
  • 1 onion, diced
  • 2 bay leaves
  • 1/4 cup chopped fresh parsley
  • 10 cups water
  • salt and black pepper

Instructions

  1. Step 1.Rinse the peas and check them for debris.
  2. Step 2.Brown the salt pork in a large soup pot.
  3. Step 3.Cook carrots and onion in the rendered fat until softened.
  4. Step 4.Stir in peas, bay leaves, parsley and water.
  5. Step 5.Bring to a boil, then reduce to a low simmer.
  6. Step 6.Cook partly covered until the peas are tender and thick.
  7. Step 7.Remove bay leaves and adjust salt and pepper.
  8. Step 8.Rest for ten minutes before ladling into bowls.
