Ingredients

  • 8 thick slices brioche or challah
  • 4 large eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tbsp granulated sugar
  • 1/4 tsp kosher salt
  • 2 tbsp unsalted butter
  • Maple syrup and berries, for serving

Instructions

  1. Step 1.Set the bread on a rack for 10 minutes so the surface dries slightly and can absorb custard without becoming fragile.
  2. Step 2.Whisk eggs, milk, vanilla, cinnamon, sugar, and salt in a wide shallow dish until completely blended.
  3. Step 3.Heat a large skillet or griddle over medium-low heat so the custard can cook through before the bread browns too deeply.
  4. Step 4.Melt a small portion of the butter and spread it across the cooking surface.
  5. Step 5.Dip two bread slices in the custard, turning once and allowing each side to absorb the mixture for about 15 seconds.
  6. Step 6.Lift the bread and let excess custard drip back into the dish before placing it in the skillet.
  7. Step 7.Cook for 3 to 4 minutes until the underside is evenly golden and the edges begin to look set.
  8. Step 8.Flip carefully and cook the second side for another 3 minutes, adjusting the heat if the butter browns too quickly.
