Ingredients

  • 1 1/4 lb russet potatoes
  • 1/4 tsp onion powder
  • 2 tbsp olive oil or bacon fat
  • 2 tbsp unsalted butter
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Step 1.Peel the russet potatoes and grate them on the large holes of a box grater.
  2. Step 2.Gather the shreds in a clean kitchen towel and squeeze firmly until as much moisture as possible is removed.
  3. Step 3.Transfer the dry potatoes to a bowl and toss with onion powder while keeping the shreds loose.
  4. Step 4.Preheat a 10-inch cast-iron or heavy skillet over medium heat and add half the oil and half the butter.
  5. Step 5.Spread half the potatoes into an even layer about one-third inch thick without packing them tightly.
  6. Step 6.Cook undisturbed for about 5 to 6 minutes so a crisp golden crust can develop.
  7. Step 7.Season the top with salt and pepper, then flip the hash browns in sections or as one round.
  8. Step 8.Add a little more oil and butter around the edges and cook the second side until crisp and deeply golden.
  9. Step 9.Transfer to a rack or warm plate and repeat with the remaining potatoes and fat.
  10. Step 10.Season immediately and serve hot while the exterior is at its crispiest.
