Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup Key lime juice
  • 1 tsp lime zest
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Lime slices, for garnish

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Heat the oven to 350°F and mix graham crumbs, melted butter, and sugar until the crumbs feel evenly moistened like damp sand.
  2. Step 2.Press the crumb mixture firmly into the bottom and sides of a 9-inch pie plate, using a cup to compact the crust evenly.
  3. Step 3.Bake the crust for 8 minutes until fragrant and lightly darker, then cool it while keeping the oven on for the filling.
  4. Step 4.Whisk egg yolks until slightly thickened, then whisk in sweetened condensed milk, Key lime juice, and lime zest until smooth.
  5. Step 5.Pour the filling into the warm crust and spread it level so the pie bakes evenly and slices cleanly after chilling.
  6. Step 6.Bake for 12 to 15 minutes until the filling is set around the edges and just barely trembles in the center.
  7. Step 7.Cool to room temperature, then refrigerate for at least 4 hours so the citrus custard becomes cold and sliceable.
  8. Step 8.Whip cream with powdered sugar, dollop or pipe it on the chilled pie, and garnish with lime slices immediately before serving.
