Instructions

  1. Step 1.Heat the oven to 375°F, butter a 9-inch square baking dish, and place it on a rimmed sheet pan in case the peach filling bubbles over.
  2. Step 2.Toss the peaches with sugar, cornstarch, lemon juice, vanilla, and cinnamon until the starch disappears and every slice looks glossy.
  3. Step 3.Transfer the peaches and their juices to the dish, spread them evenly, and bake for 10 minutes while preparing the biscuit topping.
