  • 2 tbsp avocado or olive oil
  • 1 tbsp unsalted butter
  • 2 garlic cloves, lightly crushed

  1. Step 1.Heat the oven to 400°F and remove the silver skin from the tenderloin with a sharp knife, keeping as much lean meat intact as possible.
  2. Step 2.Pat the pork dry, then mix the salt, pepper, Italian seasoning, garlic powder, and coriander in a small bowl.
  3. Step 3.Rub the tenderloin with one tablespoon of oil and press the seasoning blend over every side until the surface is evenly coated.
  4. Step 4.Heat an oven-safe skillet over medium-high heat, add the remaining oil, and wait until it shimmers before adding the pork.
