  • 4 cups Saskatoon berries
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1/4 teaspoon cinnamon
  • pinch of salt
  • 1 tablespoon butter
  • 1 egg, for brushing

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Heat the oven to 400°F and line a 9-inch pie plate with one round of chilled pastry.
  2. Step 2.Mix the berries with sugar, cornstarch, lemon juice, cinnamon and salt until every berry is coated.
  3. Step 3.Spoon the filling into the pastry shell and dot the surface with butter for a glossy filling.
  4. Step 4.Add the top crust or lattice, seal the edges well, cut vents, and brush lightly with beaten egg.
  5. Step 5.Bake until the crust is richly golden and the berry filling bubbles thickly through the vents.
  6. Step 6.Cool completely before slicing so the natural berry juices and starch set into clean slices.
