Ingredients

  • 6 Italian pork sausages, sweet or hot
  • 1 tbsp olive oil
  • 1 large yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 garlic cloves, sliced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 cup crushed tomatoes
  • 1/2 cup chicken broth
  • Salt and black pepper to taste

Instructions

  1. Step 1.Heat a large skillet over medium heat, add the olive oil and sausages, and brown them on several sides without trying to cook them completely through.
  2. Step 2.Transfer the browned sausages to a plate, leaving the flavorful drippings in the skillet.
  3. Step 3.Add the onion and all three bell peppers and cook for 6 to 8 minutes, stirring occasionally, until they soften and develop a few browned edges.
  4. Step 4.Stir in the garlic, oregano, and basil and cook for about 30 seconds until fragrant without allowing the garlic to scorch.
  5. Step 5.Add the crushed tomatoes and broth, scraping the bottom of the pan to dissolve the browned bits into the sauce.
  6. Step 6.Return the sausages and any accumulated juices to the skillet, nestling them among the peppers and onions.
  7. Step 7.Reduce the heat to medium-low, cover partially, and simmer for 12 to 15 minutes until the sausages are cooked through.
  8. Step 8.Confirm that pork sausages have reached 160°F internally, then uncover and simmer a few minutes if the sauce needs to thicken.
  9. Step 9.Taste the peppers and sauce before adding salt because sausage can contribute significant seasoning, then adjust pepper and herbs as needed.
  10. Step 10.Serve hot on crusty rolls, over polenta or pasta, or as a plated entrée with the peppers and sauce spooned over the sausages.
