Ingredients

  • 1 tbsp olive oil
  • 6–8 large pork sausages (about 700 g)
  • 1 large onion, sliced (150 g)
  • 3 garlic cloves, minced (15 g)
  • 1 medium carrot, diced (100 g)
  • 1 celery stick, diced (50 g)
  • 3 tbsp steel-cut oats (45 g)
  • 800 g canned chopped tomatoes
  • 2 tbsp tomato purée (30 g)
  • 650 ml beef stock
  • 1 tbsp Worcestershire sauce (15 ml)
  • 1 tsp brown sugar (5 g)
  • 1 tsp dried thyme (2 g)
  • 1 tsp smoked paprika (2 g)
  • 1/2 tsp black pepper (1 g)
  • Salt, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Heat the oven to 200°C fan. Put the sausages in a casserole dish and cook for 20–25 minutes, turning once halfway through, until browned.
  2. Step 2.Add the sliced onion, garlic, carrot, celery, steel-cut oats, chopped tomatoes, tomato purée, beef stock, Worcestershire sauce, brown sugar, thyme, smoked paprika, black pepper, salt, and parsley to the dish.
  3. Step 3.Stir everything together well, cover the dish, and reduce the oven to 170°C fan (190°C conventional).
  4. Step 4.Bake covered for 1 hour, stirring once halfway through so the sauce thickens evenly and the vegetables cook through.
  5. Step 5.Remove the lid and bake for a further 20–25 minutes, until the gravy is thick and the sausages are glossy and cooked through.
  6. Step 6.Taste for salt, spoon into warm bowls, and serve immediately.
