Ingredients

  • 3 cups sliced rhubarb
  • 3 cups strawberries, hulled and sliced
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup cold butter

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Heat the oven to 375°F and lightly butter a baking dish large enough to hold the fruit in an even layer.
  2. Step 2.Toss rhubarb, strawberries, sugar, cornstarch and lemon juice until the fruit is evenly coated.
  3. Step 3.Transfer the filling to the dish and level it so it bakes at the same rate throughout.
  4. Step 4.Rub oats, flour, brown sugar, cinnamon and cold butter together until a chunky crumble forms.
  5. Step 5.Scatter the topping loosely over the fruit and bake until golden with bubbling juices at the edges.
  6. Step 6.Rest the crisp for at least 15 minutes so the filling thickens, then serve warm with ice cream.
