Ingredients

  • 2 tbsp sunflower oil
  • 8 pork sausages
  • 4 sprigs fresh rosemary
  • 2 large red onions, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 knobs unsalted butter
  • 6 tbsp balsamic vinegar
  • 1 vegetable stock cube
  • 285 ml milk
  • 115 g plain flour
  • 3 large eggs
  • A pinch of sea salt

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Whisk the milk, flour, eggs and a pinch of sea salt into a smooth batter; let it stand while the oven heats.
  2. Step 2.Heat the oven to 240°C. Add the sunflower oil to a metal roasting tin and heat until very hot, with a larger tray beneath to catch spills.
  3. Step 3.Carefully add sausages and allow them to begin browning. Pour the batter around them, add rosemary and return to the oven.
  4. Step 4.Bake without opening the oven door until the batter is puffed and golden and sausages are cooked through.
  5. Step 5.Meanwhile, cook the sliced red onions and garlic in butter until soft. Add balsamic vinegar and reduce it by half, then add the stock cube and a little water to make a glossy gravy.
  6. Step 6.Serve the toad in the hole immediately with the onion gravy.
