Ingredients

  • 1 loaf French or Italian bread, enough for 6 slices
  • 225 g good-quality cheddar cheese
  • 30 g butter, plus extra for the toast
  • 2 tbsp milk or ale
  • 1 tsp mustard
  • Optional salt, cayenne pepper, garlic, or horseradish, to taste

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Slice six pieces of bread, toast them in a toaster or under a broiler, and butter each slice lightly while hot.
  2. Step 2.Chop the cheddar into small pieces or grate it so that it melts evenly.
  3. Step 3.Melt the measured butter in a saucepan over medium heat. Add the cheese and stir constantly as it melts.
  4. Step 4.Gradually stir in the milk or ale, keeping the heat gentle so the cheese does not bubble, burn, or split.
  5. Step 5.Stir in the mustard and any optional seasonings to taste.
  6. Step 6.Spoon the hot cheese sauce over the buttered toast and serve immediately for the best texture.

HELPFUL NOTES

Tips, Substitutions & Storage

Extra guidance to help you get a reliable result, avoid common problems, and know what to do with leftovers.

✓ Recipe Tips

  • Toast bread first so it supports the sauce.
  • Use mature cheddar for a full flavor.
  • Grill until bubbling, not merely melted.

! Common Mistakes

  • Untoasted bread becomes soggy.
  • High heat can split cheese sauce.
  • Too much ale makes the topping runny.

↔ Substitutions

  • Use milk instead of ale.
  • Use Dijon mustard for a milder result.
  • Omit cayenne for less heat.

⌂ Storage & Reheating

  • Best served immediately.
  • Refrigerate extra cheese sauce for 2 days.
  • Reheat under the grill rather than microwaving.
