Ingredients

  • 2 cups diced frozen hash browns (255 grams)
  • 1 pound breakfast sausage (453 grams)
  • 1 small onion, diced (about 1 cup / 140 grams)
  • 1 red bell pepper, diced (about 1 cup / 120 grams)
  • 2 teaspoons minced garlic
  • 8 ounces shredded cheddar cheese (226 grams)
  • 12 large eggs
  • 3/4 cup heavy cream (180 millilitres)
  • 1/4 cup whole milk (60 millilitres)
  • 5 dashes Tabasco sauce
  • 1/2 teaspoon table salt
  • 1/4 teaspoon ground black pepper
  • 1/8 rounded teaspoon nutmeg, optional

Instructions

Follow each step in order. The directions below are written so a beginner can understand what to do, what to look for, and when to move on to the next step.

  1. Step 1.Butter a 13-by-9-inch baking dish and spread the diced frozen hash browns evenly across the bottom of the dish.
  2. Step 2.Brown the breakfast sausage in a skillet, breaking it into small pieces, then drain excess fat only if necessary.
  3. Step 3.Cook the onion and red bell pepper in the skillet until softened, add minced garlic, and cook just until fragrant.
  4. Step 4.Scatter the sausage and cooked vegetables over the hash browns, then distribute the shredded cheddar evenly on top.
  5. Step 5.Whisk eggs, heavy cream, whole milk, Tabasco, salt, pepper and optional nutmeg together until completely blended.
  6. Step 6.Pour the egg mixture slowly over the casserole so it settles around the potatoes, sausage, vegetables and cheese.
  7. Step 7.Bake at 375°F for 40 to 45 minutes until the centre is set and a knife inserted in the middle comes out clean.
  8. Step 8.Rest the casserole for several minutes before cutting so the egg custard firms and each serving holds together.
