- 4 slices tomato
- 1 cup shredded iceberg lettuce
- 40 grams old cheddar, coarsely grated
- 40 grams provolone, coarsely grated
- 4 tablespoons mayonnaise
- 3 to 4 tablespoons bomba sauce
- 1 to 2 tablespoons salted butter
- 2 kaiser rolls, sliced and buttered
- 8 slices peameal bacon

- Step 1.Slice the tomatoes and shred the iceberg lettuce so the cold toppings are ready before the bacon begins cooking.
- Step 2.Combine the mayonnaise with three to four tablespoons of bomba sauce and stir until the spread is smooth and evenly coloured.
- Step 3.Butter the cut sides of the kaiser rolls and toast them in a pan until golden, then keep them warm.
- Step 4.Pan-fry the peameal bacon for two to three minutes per side until cooked through and lightly browned at the edges.
- Step 5.Place the cheddar and provolone over four bacon slices so the cheeses begin to melt from the residual heat.
- Step 6.Spread the bomba mayonnaise on the toasted rolls, then arrange tomato and shredded iceberg lettuce on the bases.
- Step 7.Add four bacon slices to each roll, positioning the cheese-topped slices so the filling is evenly distributed.
- Step 8.Close the sandwiches and serve immediately while the rolls are crisp and the peameal bacon is hot.
